Things have been really, super, very busy around these parts. I used to think “oh, as soon as XYZ is done, I will have ALL THIS TIME to do SO MANY THINGS”. Recently, I had the realization that I will likely always have projects and it makes sense to get used to having a lot going on. This is the life of a person who is willing to #workthathustle in order to live an enjoyable life. It is full, of course, but that doesn’t mean it’s bad.
There are a lot of moving parts in terms of my day to day and I don’t take that for granted. While I’ve always been driven by projects and achievements, for years I didn’t do much outside of my eating disorder. I am honestly still getting used to the fact that I have a big life, with friends and clients and a partner. When I start to feel overwhelmed lately, I try to remind myself of times when I would simply mope all day and go to bed at 7PM, because I just wanted my day to be over. My life was therapy, the nutritionist, OA meetings, and compulsive cardio. I hated my body. My friendships were limited, and even with people I felt alone.
I don’t forget where I’ve come from.
ANYWAY, I am supposed to be telling you about my meals and snacks, not the deep dark shit in my past. What I am basically trying to say is that with my business, my side hustle recipe formulation, writing, friends, the podcast, my partner, a wedding in less than three weeks, kauai right after, and a move to Portland in September, shit is definitely happening. I am not living on the sidelines and I’m super grateful! Here is a peak at my food:
6:00AM – Pre workout, AKA breakfast number one:
My daily morning steez has been a FitQuick waffle with banana soft serve lately, and I cannot recommend this combo enough. The carbs give me quick energy to get out there and crush it at the gym, and a waffle and ice cream breakfast makes the kid in me really, really happy. After this waffle I hit the gym for the first day in my de-load week. I did the following workout:
A. 1 clean and 2 front squats- 4 sets at 70% of your clean one rep max
B. Back squat: 3 sets of 8 at 60% of your one rep max
C. Behind the Neck snatch grip push press- 5 sets of 3 at 60% of your one rep max snatch
D. Superset: 2 sets- 20 hip extensions, 20 weighted walking lunges
E. Cardio: 90 double unders, 30 back squats, 60 double unders, 20 front squats, 30 double unders, 10 overhead squats . (finished in 17 minutes and 36 seconds) Incidentally, my friend Ed was filming his back squat PR as I finished my overhead squats and he captured me here. I felt truly fucked as I completed this workout, but I’m looking strong! I’ll take it.
9:30AM- Post workout, aka Breakfast number two:
I love the fitness life for many, many reasons and how good exercise makes food taste is just one of them. This meal was a Stumptown Cold Brew in honor of my beloved Portland, paired with some Bread SRSLY vegan gluten-free sourdough, nooch, and some super-eggy style tofu scramble. This recipe is soooo simple, but the Kama Nalak salt takes the scram to a serious next-level. As a vegan who used to love eggs, I find this to be divine.
1:00 PM- lunch!
In the past, I have always had green smoothies for one of my two breakfasts, and it has taken some adjustment to just be getting my first veg serving after noon. I personally find that old orthorexic thoughts can still creep in from time to time, so I am actually enjoying the challenge of letting myself have what I want, as opposed to what I think I should have. Who says green smoothies are the only breakfast? Really, I think the answer is that no one said that, and that somewhere along the lines I made it up as a rule and stuck to it regardless. My breakfasts are directly around my workouts, and I find myself significantly more satisfied when I chew to get my nutrition at those times. Maybe you feel the same?
What was I talking about again?
Oh, yeah. Lunch.
So, by the time lunch rolled around, I was super ready for some veg-action. This pile is kale, steamed yukon gold potatoes, Beyond Meat grilled Chicken Strips, and Rita’s Chipotle Salsa, all piled on Food for Life Corn Tortillas. The tortillas are sprouted (yay, digestability!) and made of whole corn kernals. I LOVE them.
Dinner was a new recipe I formulated for the KeVita blog that I am actually really excited about. It involved eggplant, chickpeas, tomatoes, onions, capers, olives, cilantro, zucchini noodles, and – of course- some KeVita. It was topped with So Delicious Unsweetened Cultured Coconut Milk and it tasted awesome. At the time of writing, that recipe has yet to be posted, but keep checking back. It should be up there soon!
It is definitely on the liberal side to call a protein chia pudding a dessert, but it was sweet and cold without the blood sugar spike, so I think it’s kind of perfect. Basically, I soaked 3 Tablespoons of Chia with unsweetened homemade pumpkin seed milk, 1 scoop of Vanilla Vega Sport and some frozen berries, and it tastes fucking awesome. I eat some variation of a protein pudding, ice cream, or pancake (typically using Vega) almost every day and I LOVE the flavor.
In between my foods and my workout I promoted a post I had written on emotional eating, cleaned the gym that I do a trade with, got groceries, answered client emails, formulated a meal plan, met with a client in person, formulated and photographed said KeVita recipe, trained a client, showered, and recorded my Podcast.
With the exception of the dinner recipe (which I formulated and took time with as part of my work), each meal took me less than 10 minutes to prepare. It may seem overhwhelming to eat healthy, but once you get in the flow it can actually be super efficient.

I have had a fantastic couple of weeks.
I went to Disneyland, I got engaged, I got home, I returned to work with a job that I love, I wrote, I swam, I lifted, I ate food that was fucking awesome. This time last year I was working a job that was slowly killing me, and I was sick- physically, emotionally, and spiritually. I had IBS that made me feel somewhere on the scale of uncomfortable to terrible all the time. I grinded my teeth at night and rarely slept well. I was well on the road to loving my body and treating myself right, but it wasn’t consistently clicking.
When I work, I try to keep these facts in mind. I often get overwhelmed with the sheer volume of effort that I put into Super Strength Health, not because I don’t want to do the work or find it to be a chore, but because most tasks simply take me about three times the amount of time than I think they well, and thus my to-do list is perpetually long.
But the truth is, this work has both changed and saved my life in a number of ways. It gave me something to look forward to waking up to- day in and day out. It gave me huge amounts of self-esteem and a ton of incentive to KEEP doing my best, KEEP talking to myself kindly, KEEP loving the shit out of myself no matter what. Super Strength Health for me is freedom. The freedom to love my body. The freedom to be publicly open and imperfect and raw. The freedom to offer my listening ear most hours of the day, the freedom to let myself be supported financially by something I am extremely passionate about. It helps me as much as anyone else, and to keep it going I have to remember where I came from, and where I am now.

6:30AM Wake up.
When I first started my journey to self-employment, I felt scarred from 5am wakeups and 3 hour a day commutes. I relished in never EVER using an alarm to wake up. I am naturally an early riser, so most of the time I wake up with the sun anyway. It seemed reasonable to allow myself time to get into my natural rhythm. That was awesome for about a year, but these days I find myself using my alarm again, because there is a 7:30AM class at my gym that I genuinely enjoy taking. Although rising to do something I love is much much different than rising to sit in traffic, it is still not exactly easy to wake up to darkness. I never regret it once I am at the barbell, though, so I keep that in mind as I stumble around in the dark.
For those curious: my breakfast is consistently oats with almond milk, banana, raisins, and peanut butter and I always eat before I lift. I know some folks are all about fasted AM cardio, but that feels like shit to me, so I don’t do it. Huzzah for bio-individuality and meeting my own needs.
7:30 AM Barbell WOD
Today’s workout was a warm up, a complex of squat cleans, front squats, thrusters, and push presses, some backsquat sets, some deadlift sets, a superset of push ups and pull ups, and a 7 minute AMRAP of overhead squats and toes to bars. I was thoroughly worked when I was finished and straight chugged my recovery smoothie of Vega Sport, maca, chlorella, pineapple, banana and almond milk as soon as I was done. It tasted heavenly.
For those curious: I consider my workouts and my food to be a serious part of my business. It is my job to practice what I preach and my workouts are scheduled into my life like work hours (barring illness or exhaustion or injury)
9:00AM Prep for my meal prep-clients.
A new (and fun!) part of Super Strength Health is vegan, gluten-free, refined sugar free meal delivery.
It is important for me to offer my clients the freshest local and organic ingredients possible, so first I hit up the farmer’s market. I get the things I can’t get there (beans, coconut milk, etc.) from my local whole foods.
Today’s clients got vegan taco salad (romaine, lettuce, tomato, grilled scallions and green peppers, salsa, homemade bell pepper cilantro vinaigrette, black beans, and walnut taco “meat”) and coconut, kale, kidney bean and chickpea chana saag with wild rice. It took me about three hours to shop, prep, make, and package up enough for everyone and they picked up the goods from my house later that day. (I do delivery too, its just much cheaper for folks to come to me if they can!)
I ate some of the food I made for others for lunch, and it ruled.
12:00 Computer time
This is the moment of reckoning for me, because my email inbox is kiiiiinda cray. I tried to approach it calmly with intermittent deep breaths. I don’t know what it is about the time I have to spend on logistics that tends to give me anxiety, but it’s definitely a thing that I have to be gentle with myself about. I spent three hours computer-ing and it was totally fine. A lesson to Lacy of the future: do not fear the inbox!
3:00 Cofee with this babe.
This is my friend Jaiye. She is most often seen biking anywhere and everywhere, but sometimes we both slow down and get to have coffee with one another, which always feels much needed. I stole this picture from her social media, as it was taken mid-bike tour, which is when I am pretty sure Jaiye is the most stoked.
I caught up with Jaiye at Timeless Coffee while the sun peeked through for the first time in days. Life was good. Oh yeah! I also ate some collard green chips with my Americano ’cause I was feelin’ snacky.
It’s amazing, because my title is health and wellness coach, but much of what I do in a day is not actual session time. Tonight I met with a client that manages to seriously move me every single time we speak. I am amazed at the people that I get to work with! It is humbling to spend time with those who are demanding self-love in a world that doesn’t necessarily promote it, and I am honored to bare witness.
7:00PM Dinner and band practice
After my session, I dove into some food (wild rice, tempeh, romanesco, kale, tahini and nutritional yeast in case you couldn’t tell!), and hopped in my car. Due to some flooding issues of our practice space, we didn’t have a full practice, so one of my greatest homies (oh, and our bassist) and I went over some lyric placement so that I am extra prepared to shred when the space dries out.
9:00PM Shower, dudefriend snuggle, 1 episode of Gilmore Girls, and sleep.
In roughly that order, I relaxed into my off time, mentally high fived myself for a very fulfilling day, and got some shut eye. I am an eight-hours-of-sleep-or-bust type of babe, so I have a strict 10:00PM lights out policy if I plan on having another early morning the next day (which I do!)

It’s Hallo-week and boy am I PUMPED. My Dudley costume is nearly done, and all week people have been coming up to me to tell me which Wes Anderson character they will be dressing as at my party. I seriously have my fingers crossed for a huge team Zissou, or perhaps a zombie Margo Tannenbaum.
I just started my week off right with this incredibly awesome smoothie. It’s super creamy, refreshing, and just a little bit fizzy, due to the carbonation in the KeVita. I’ve been experimenting with maca lately, in hopes of gaining a bit more energy, focus, mood balance, and improved hormonal health. I haven’t been using it long enough to know the long term effects yet, but I have to say, every time I put just a bit in a smoothie my brain is on super-smiley-high-alert.
Maca + KeVita’s probiotics= my guts and my brain are feelin’ it. Life is good.
|Mocktail Monday #3: Creamy Tropical Fizz|| |
- 1 bottle mango coconut flavor KeVita
- 3 leaves kale
- 1 large red grapefruit
- 1 lime, juiced
- 1 medium banana
- 1 medium avocado
- 1 teaspoon maca (I used Vega brand)
- Add KeVita to blender, then add the kale (stem if you do not have a high speed blender).
- Peel and chop grapefruit, avocado, and banana. Juice the lime directly into the blender.
- Add Maca, and whiz until very creamy.
