Strawberry Apple Crisp
I am so psyched about this recipe. It is DELICIOUS.
A few weeks ago I got an email from a lovely woman named Melissa, who owns and runs a company called Tastymakes. The email stated that Tastymakes was a raw vegan company, and that they wondered if I wanted to try some of their products to review. I love free stuff, I especially love free raw, organic, sprouted and gluten free vegan stuff. “Of course!” I said. Being a blogger is super fun.
A few days later I got a beautiful package that was literally chock full of samples. The first time I tried one (salt and vinegar raw crackers to be exact) I was just post-workout and I moaned with glee. (Can we talk about eating after exercise? Everything tastes AWESOME.)
I thought long and hard about how I wanted to talk about these products and I came to the conclusion that ultimately, I don’t actually love straight up product reviews on blogs. They bore me! Everything I tried from Tastymakes was great- If raw granolas, bars, and crackers are your thing, these are definitely the best ones I’ve tried- but the honest truth was a few of the items I received made me want to make things. Pie, specifically. I figured my readers would probably like pie more than me saying “this was really good!” in a thousand different ways.
From that urge, this recipe was born.
|Strawberry Apple Crisp|| |
- 1 cup Tastymakes vanilla nut granola
- 1.5 cups Tastymakes Choco-coco granola divided (.5 cups for crust, 1 cup for topping)
- 7 Medjool dates (Fresh ones. Soak yours if they are dry)
- 10 Tastymakes Lemon bar bites
- 3 medium granny smith apples, peeled and sliced thin
- 16 oz. organic strawberries, sliced thin
- ½ cup oat flour (you can make this by pulsing oats in a food processor)
- 2 Tablespoons coconut sugar
- 4 Tablespoons coconut oil, divided
- ½ cup gluten free rolled oats
- Preheat oven to 375F
- grease a 9" cast iron skillet with coconut oil
- In a food processor, pulse 1 cup Vanilla Nut granola, .5 cups choco-coco granola, 7 dates, and 10 lemon bar bites. Your final product should be sticky and clustered.
- Press the whole mixture into the bottom of your pan, forming a crust
- peel apples
- slice strawberries and apples super thin, toss in a bowl with ½ cup oat flour, 2 Tablespoons coconut oil and 2 T coconut sugar.
- Mix together and pour into the pan on top of the crust
- pulse 1 cup choco-coco granola with 2 Tablespoons coconut oil and ½ cup oats
- Pour on top of fruit mixture to form a crisp top
- Bake for one hour, until top is nice and brown and your whole house smells like awesome
This pie blew my mind with how incredible it was. There was no refined sugar in it, and granny smith apples and strawberries can be a bit tart. I was worried it would be decidedly un-sweet but BOY was I wrong. It was the perfect amount of sweet, ooey, gooey, crispy, warm, delicious and pretty darn healthy, if I do say so myself. I ate it for dessert with friends the night I made it, and again for breakfast the next day. NO REGRETS.
